When frying, I: 1. Heat oil on stovetop, then move outside and actually fry on my heated gas grill burner. 2. Let oil cool, then drain thru cheesecloth. Most people jam too much in the oil, lowering the temperature and you end up with oily food. Cod loin or haddock are the best IMO. Both are white, flaky fish that are readily available.
