Best fish and chip recipe?

Requirements:

They must turn out crispy and not oily in the least. I'm guessing cod would be the best for the fish part.

Don't want to have to use a full on deep frier having to use so much oil that I may not need for a while. 

Is there such a recipe?

When frying, I: 

1. Heat oil on stovetop, then move outside and actually fry on my heated gas grill burner.

2. Let oil cool, then drain thru cheesecloth. Store in a cool/dark place, can reuse 2 or 3 more times.

Have done it many ways...

I do a tempura variation with ginger ale and rice flour

beer batter.... amber ale and lime juice

breaded

Also, you need to make sure that the oil is sufficiently hot. Most people jam too much in the oil, lowering the temperature and you end up with oily food.

Cod loin or haddock are the best IMO. Both are white, flaky fish that are readily available.

I actually have ginger beer around more often than ginger ale.
