I focked up the fried chicken

I hadn't made fried chicken in more than a decade. The last time I made it, it was great.

Tonight, I thought I'd done everything right, but all the batter fell off the chicken during the fry.

The batter that got crusty tasted delicious, and the chicken itself tasted great.

I think I had too much oil in the pans.

Always next time, homemade fried chicken is simply delicious.

What temperature was your oil at. That's more than likely the issue.

could be low oil temp.

 

i soak the chicken in buttermilk over night (I often season this- ginger, hot sauce, soy, whatever)

 dredge in dry ingredients (ie: flour/cornstarch/spices, etc).  then fry
