As I’ve aged I find that I get drunk more often when cooking than any other time. Far cry from the days of intentionally getting blitzed on the weekend. I would never trust a cook who can't manage taking a sip of water or beer or wine because they are so tied up with the cooking process. Sounds like they are over their heads in what they are doing. I follow Damaris Phillips, as much for her chefing as wanting to mate with her, and I take ideas from Nadia G and Natasha’s Kitchen. With NK I often tweak her recipes to put my own spin on things.
