Hard boiled eggs: Whites or yolks?

yes they are but if cholesterol is not an issue for you or you are not looking for JUST protein, then you're missing out on the best nutrients of the egg :dunno:

and that doesn't have anything to do with throwing away the yolks. companies that sell just egg whites are not tossing out the yolks.

I'm guessing some people do. When my wife wants an egg white omlate sometimes I make aioli out of the yolks, sometimes I just toss them.  My pancake and waffle recipes only include egg white and I always toss the one or two yolks.  Meringue only uses egg whites for example. Lots of recipes that way. Icecream only uses the yolks.  

So now two reasons to toss the yolks, if you're avoiding cholesterol and if the recipes calls for egg whites and you don't have an immediate use for the yolks.

 Meant companies selling egg whites. They generally use or sell the yolks to be used in mayo, ice cream dressings etc.

Well for sure when dealing with tens of thousands of eggs.  Probably even sell the shells for fertilizer.  We use them to get calcium to the tomatoes.

I do the same with my egg shells for my tomatoes, eggplants etc.
