I'm guessing some people do. When my wife wants an egg white omlate sometimes I make aioli out of the yolks, sometimes I just toss them. My pancake and waffle recipes only include egg white and I always toss the one or two yolks. Meringue only uses egg whites for example. Lots of recipes that way. Icecream only uses the yolks. So now two reasons to toss the yolks, if you're avoiding cholesterol and if the recipes calls for egg whites and you don't have an immediate use for the yolks.
